As I write this it's citrus season and we're creating batch 7 of Optimus Lime. This time we're keeping it super local (to our house) and picking these over the neighbour's fence. With permission, of course!
At the moment we are trying to produce enough Optimus Lime to get us through to the next citrus season. Walking a fine line between not enough and having too much inventory wrapped up in the one thing. (We are a small business, so a few hundred bottles is a lot of bottles for us!). It's a bit of a guessing game - will demand for Optimus remain strong, or will it grow, and will limes be early, late, or non-existent next year?
